Bake your own celebration cake
Ingredients
13oz Self
raising flour
1 heaped
teaspoon baking powder
10oz
margarine
10oz
Fairtrade soft brown sugar
4 large eggs
Rind of 1
lemon and 1 orange
1 tablsp
orange juice
1lb
Fairtrade mixed dried fruit
5oz
Fairtrade raisons or chopped dates.
2oz glace
cherries.
Method
Line an 8
inch cake tin.
Cream
margarine and sugar.
Gradually beat
in eggs.
Stir in
dried fruit and grated rind.
Sift flour
and stir in, finally adding the orange juice.
Place in
lined tin, making a hollow in the centre of the mixture. Bake at gas mark 2 - 130 degrees celsius for
about 3 hours.
Fresh
Fruit Cake
Ingredients:
300g FT golden castor sugar
3 eggs
300mls sunflower oil
2 ripe FT bananas
300g plain flour
1 teasp. Bicarbonate of soda
100g fresh FT pineapple
chopped (should also work with tinned)
50g chopped FT brazil nuts
1 teasp. Vanilla essence
Icing make a butter icing mixed with FT orange juice.
This mixture makes 2 small tray bakes. 1 to eat and 1 to freeze perhaps!
Line tins approx. 9” by 6” with baking parchment
Preheat oven elec. fan assisted140c or gas mark 4
Place eggs and oil in liquidiser goblet and whiz to amalgamate
Add large slices of banana and repeat
Finally add sugar and whiz until all well mixed
Tip into a mixing bowl and sieve and fold in flour and Bicarbonate of Soda
Add vanilla, pineapple, and nuts. Fold all in gently.
Divide between tins.
Bake for approx 40 mins. The cake is ready when it springs back from slight pressure.
Cool then ice, (Icing make a butter icing mixed with FT orange juice) also good just as it is.
Date and
Walnut Cake
8fl.oz water
6oz FT soft brown sugar
1oz butter
1 teasp bicarbonate of soda
4oz FT dates chopped
2 eggs beaten
8oz wholemeal plain flour
4oz FT walnuts chopped
Bring water to the boil add sugar, butter, bicarbonate of soda and
dates.Reduce heat and stir gently over a low heat until the sugar dissolves.
Cool.
Stir in beaten eggs. Mix thoroughly then add flour and walnuts.
Put mixture into a lined 1lb loaf tin and bake at 190⁰ c, gas mark 5 for approx.
45 minutes.
